Explanation:
In many countries (but not all), una "Licenciatura" = Bachelor's Degree...hence the title "Licenciado".

Whatever best fits your context (for a CV), I would suggest either:
1)"University Graduate in Economics"..or
2) "Bachelor's Degree in Economics".
