"Anamnesis" is the formal medical term for "(taking a patient's) medical history," so you could say "taking medical histories" instead of "anamnesis."

In this context, "tecnicas exploratorias" doesn't refer to surgical exploratory techniques, but rather to how patients are examined, so "examination techniques" is the proper phrase.
