Winkles marinated in lemon
Explanation:
Ceviche is a dish of raw fish marinated in lemon juice. Whilst caracol refers to snails in general, be they sea or land snails. However in English we say 'snails' for the land variety and 'winkles' for the sea variety. Winkles refers to any edible marine gastropod mollusc.

Explanation:

cebiche de caracol = shellfish dish

“Caracol” is the general word for “shellfish”, whereas “cebiche” is a dish, which can be made from fish and/or shellfish:

caracol
(nm) (Zool : esp LAm) snail;
(concha) (sea) shell;
(rizo) curl;
(Arquit) spiral;
escalera de ~, spiral {or} winding staircase.

cebiche
(nm) (CSur Culin) fish {or} shellfish dish.

The English word for this dish is «shellfish dish», which can be used in any context. However, since there are many types of edible shellfish, as well as many varieties of known shellfish dishes, I would specify the item further through saying «Spanish shellfish dish», «South Amercian shellfish dish», «Portuguese shellfish dish», or the like. See below some examples of the English «shellfish dish»:

... Shellfish with bread, Clams in saucepan, Grilled shrimps. Lobster stew,
Big shrimps Soufflé, Lobster. Shellfish dish, Clams, Delicious lobster. ...

snail souffle, escargot

Explanation:
Monica, it is really quite simple as opposed to the aforementioned proposal. Being in the restaurant business for some time, my recommendation would be that you maintain a simple translation throughout the menu. Escargot is a french word, but people who are going to order escargot will know what it is. After all, who says, "Snails!Mmmmm, think i'll try some...".
Caracol, is just a plain, old, sea snail.
Hope you lick this menu, though. (it's an expression) Good luck to you.

sea snail ceviche

Explanation:
You don't need to translate ceviche - it would be like translating quiche. It's a very common dish in Mexico and South America and can be prepared with different kinds of seafood.

I did a Google search and found the site below, a list of Mexican dishes. Maybe it's helpful for the job you're doing. The other site mentions a resort's ceviche bar that serves, among other things, "sea snail ceviche".

Enjoy!

sea-snails in lime / citric juice

Explanation:
Curious thing about ceviche is that the citric element is available only around the equator. One nice recipe is with onion, ginger and (tropical) lime juice.

escargot ceviche

Explanation:
I would not get close to a snail souffle!

Seashells ceviche is not correct as they are really "ceviche de conchas" (of which there are several varierities). I would not specify that the caracoles are sea snails. In some places ceviche is made of non-acuatic snails.

Luis (fond of ceviche).
By the way Peruvian ceviche is great. Guatemalan is very good. I hope the Mexican is as good as the Peruvian :>
