He encontrado una explicacion que es "vino con contenido en taninos elevados, lo que le confiere la posibilidad de una larga conservacion", pero no entiendo que es "estructura" de vino y como se traduce.

To quote from the Hugh Johnson pocket wine book (always good to have around!)
"Structure: The "plan" of the flavour as it were. Without structure the wine is bland, dull, and won't last"

Perhaps not terribly clear, but what he is trying to say is that any wine needs to have a variety of sensory experiences, flavours and bouquets, which must combine well and in appropriate proportions, and this is the structure: and is what a wine taster is trying to appreciate and then describe in words.

As Hugh Johnson says in another part of the book "Anyone can play but few can play well"!!

Structure is a word in regular use in wine tasting, and I don't think your Spanish definition is along the right track: that seems to be more "tanniny".

Es el "cuerpo" del vino. Te sugiero un paseo por las muchas páginas sobre vinos de la red para ver la terminología; como son palabras describiendo sensaciones, a veces las expresiones son bastante pintorescas (el "long finish" del último ejemplo lo he oído como "de boca larga", o "largo de boca", por ejemplo).
