Para adornar

Papel encerado para hacer duyas o cucuruchos para adornar
Moldes para hacer las calaveras


Procedimiento
Ponga al fuego un traste con el agua y el azúcar y mueva hasta que el azúcar se disuelva. Cuando suelte el hervor, déjelo no más de 12 a 15 minutos.

Se la retira del fuego y se la bate hasta que cambie su color a blanco.

Empiece a rellenar los moldes por el orificio, después de unirlos con ligas; cuando estén llenos, colóquelos hacia arriba.

Cuando sienta los moldes tibios y el azúcar del interior haya cuajado, tome los moldes, sumérjalos en agua y sáquelos enseguida.

Quite las ligas y retire los moldes. Ponga las calaveras a escurrir y secar sobre una charola.

Para el decorado, se hacen las duyas con el papel encerado.

Bata las dos claras de huevo, agregue azúcar glass hasta que se forme una pasta suave, y también unas gotas de limón. Vierta esta mezcla en 4 o 5 trastes pequeños y a cada uno póngale unas gotas de los colores que quiere usar.

Llene cada duya con un color, córtele la punta cuidando que quede una salida pequeña y adorne la calavera junto con los recortes de papel estaño que se desea utilizar.

3/4 kg. sugar
1/2 teaspoon cream of tartar
1 cup (250 mL) water
Molds

For the icing:

2 egg whites
Icing sugar (U.S.: confectioners sugar)
Food colouring
Metallic paper in a variety of colours
Wax paper to make icing tubes
Molds for the calaveras (candy skulls)

Method
Combine the sugar and water [and cream of tartar] in a saucepan and heat until the sugar is dissolved. Bring to a boil, and boil for 12 to 15 minutes.

Remove from heat and beat until it turns white in colour.

Join the halves of the molds together using elastic bands, then fill them with the sugar mixture through the opening. Set them with the opening facing up

When the molds have cooled to lukewarm and the sugar has crystallized, submerge them briefly in water and take them out again.

Remove the elasic bands and carefully remove the molds. Set out the calaveras on a tray to dry.

To decorate the calaveras, begin by rolling sheets of wax paper into funnels for the icing.

Beat the egg whites. Add icing sugar [confectioners sugar] until the mixture is soft. Add a few drops of lemon juice. Divide the mixture between 4 or 5 small dishes and tint each one with a different food colour.

Fill the wax paper icing tubes with the different coloured icings and snip off the point.
Decorate the calaveras with small bits of metallic paper (paste them on with a dab of icing), and pipe on designs of coloured icing.

Procedure
Heat the water & sugar in a pan & stir until the sugar dissolves. When it begins to boil, leave it no longer than 12 to 15 minutes.

Remove it from the heat and beat it until it turns white

Start filling the molds through the opening after tying them together with rubber bands; when they are full, place them face up.

When the molds feel luke warm and the sugar inside has solidified, take the molds, submerge them in water, then remove them immediately.

Remove the bands and the molds. Place the skulls to drain and dry on a tray.

For making the decorations, the cones are made with the waxed paper.

Beat the two egg whites, add glasé sugar until it forms a smooth paste, and also (add) a few drops of "limón" (not lemon). Pour this mixture into 4 or 5 small containers & in each one put a few drops of the colors you want to use.

Fill each cone with a color, cut off the point, taking care that a small opening remains, and decorate the skull along with the pieces of foil you want to use.
