Spanish term or phrase: encuentro
"Estos corrales son en tiempo de invierno un verdadero lodazal, en el cual los animales apeñuscados se hunden hasta _el encuentro_, y quedan como pegados y casi sin movimiento. En la casilla se hace la recaudación del impuesto de corrales, se cobran las multas por violación de reglamentos y se sienta el juez del matadero, personaje importante, caudillo de los carniceros y que ejerce la suma del poder en aquella pequeña república, por delegación del Restaurador. Fácil es calcular qué clase de hombre se requiere para el desempeño de semejante cargo."

This is the continuation of the text where I asked for help regarding the term "media agua". The translator before me rendered "hasta el encuentro" as "up to the shoulders". I wonder if encuentro might mean the steers' inguinal area. If the mud reached their shoulders they could even drown in it!!!

Thanks very much, all yr suggestions will be much appreciated. Any translators who have experience as cattle rustlers especially!

Te paso la definición de la RAE que considero se aplica en este caso:
En los cuadrúpedos mayores, puntas de las espaldillas que por delante se unen al cuello.
"Espaldilla", por su parte, sería
"Cuarto delantero de algunas reses, como el cerdo, el cordero, etc."
No me suena hablar de "nape" tratándose de ganado. Creo que con decir "neck" basta. Tampoco usaría shoulders, que además no sería la parte correcta.
