DESCUBE: Operación de vaciar la cuba para separar el vino de los orujos.

DESPALILLADO: Separar el escobajo o raspón (racimo) del mosto.

Once the grapes have been carefully selected, they are taken to the wine vault, where the following procedures take place:
Crushing: The must is obtained by pressing the grapes. To do so a wine press is used.
When making quality white wines, this process is called "drainning off".
Sulfitation:
Sulphur dioxide is added into the vessel for two purposes: antisepsis as well as to protect the grapes from rusting.
Decantation:
The must is cleaned and separated from thick particles, in order to get an appropiate must for a better fermentative process.
Casking:
Different types of vessels (barrels) are used for casking. Since wine is generally taken cool, light and fragrant, the fermentative process should be conducted at low temperatures. Nowadays stainless tanks or barrels fully equipped with modern refrigeration systems are used to get the best results.
Fermentation:
Selected leavens are added to the must. They will turn the must sugar into alcohol and other substances.
Descube:
Once the fermentative process is finished all solid materials ( dead leavens, tartar, bacterium and any other) fall to the bottom of the vessel where the clean wine is separated from the waste products (yeast)
Racking:
Racking means pouring wine into another vessel leaving all yeast in the previous one.
Lighting:
A colloidal substance, either from animal or vegetal origin, is added to wine.
These substances take non desirable elements to the bottom of the vessel.
Stabilization:
This process makes wine completely clean to bottle it..
Bottling:
Wine is poured into bottles and labeled.

DEGUELLE/FILTERING: Elimination of the deposits formed in a sparkling wine during its second fermentation in the bottle.
