Sur le menu d'un restaurant on trouve :

"Patatas Duquesa y tomate albardado"
"Pommes de terre duchesse et tomates ?"

où "albardado" = "wrapped, coated" (soit "emballé" ou "enrobé").

J'ai donc pensé à "tomates en papillotes" mais vraiment rien de sûr...
