C'est de la BAJOUE en français (il faudrait conserver le nom andalou)

Les noms des plats terminent tous avec l'accent andalou (á)
donc "carrillada" se transforme en "carrillá"
et "caladereta" se transforme en "calderetá"

Ou alors, cela viendrait de "carrillada".

Explanation:
En Andalousie,
Carrillá -> Carrillada
Fritá -> Fritada
Camaroná -> Camaronada, etc.

La Carrillada est une sorte de ragoût de porc.
"Grande fête du ragoût de porc" ne me parait cependant pas une très bonne traduction :o)

agree  Martine Joulia: Encore que "carrillada" ne soit pas forcément un ragoût, et désigne simplement (comme carrillera), les joues (porc, veau, etc.). Il se pourrait fort bien que la viande soit grillée. Ceci dit, votre solution laisse la "joue" de côté, si je puis dire.
