Yo lo traduciría así, pero es muy difícil traducir alimentos que se anuncian en un menú, pues cada restaurante tiene sus especialidades.
Por lo menos creo que con ésto se entiende lo que es.

disagree  Karlo Heppner: Da wird den Deutschen aber der Appetit vergehen. Gepresste Kartoffel ist im Deutschen Kartoffelbrei und eine Emulsion im Essen klingt auch nicht besonders lecker. Erinnert so ein Körperemulsion.
