Torta Selva Negra

• 150 g de chocolate • 150 de manteca • 100 g de azúcar molida • 6 huevos • 150 g de harina • 1 cucharadita de polvo para hornear • Relleno: 100g de manteca • 200 g de azúcar molida • 200 g de crema de leche batida • 2 barritas de chocolate rallado

Derretir el chocolate con poca agua y dejar entibiar. Batir la manteca con el azúcar hasta formar una crema lisa. Agregar el chocolate y seguir batiendo unos minutos. Incorporar las yemas de a una sin dejar de mezclar. Incorporar la harina previamente tamizada con el polvo para hornear. Batir las claras batidas en punto de nieve, incorporarlas al batido anterior y mezclarlas suavemente. Distribuir en un molde para bizcochuelo enmantecado y enharinado y cocinar en horno de calor moderado durante 35 minutos aproximadamente. Desmoldar, enfriar y cortar en capas.

Relleno: batir la manteca con el azúcar y, cuando tome punto de crema lisa, agregar la crema previamente batida hasta espesarla un poco. Armar la torta rellenando con parte de la crema y cubrirla con la restante alisando bien. Cubrir los costados y la parte superior con el chocolate rallado con rallador grueso. Sugerencia: puede agregarse al relleno guindas o cerezas frescas o al marrasquino.
