Surfactant is one kind of material that can significantly change the property and state of the system interface by adding a small amount of such. The molecule of surfactant consists of two parts with different properties, of which one part is non-polar groups composed by hydrophobic chains and the other part is oleo-phobic and hydrophilic polar groups. Those two parts are located at both ends of surfactant molecule respectively; therefore the surfactant molecule is both lipophilic and hydrophilic amphiphile. It cannot only prevent the exclusion of oil and water phase, but could also link up these two phases.
The amphiphilic characteristics of surfactant molecule make it very easy to be adsorbed on the gas-water surface or oil-water interface to form a unique alignment of monolayer in aqueous solution, thus enabling the surfactant acquire many special surfactivity, including lowering the interfacial tension, emulsion, demulsification, foaming, de-foaming, washing, dispersion, flocculation, anti-static, lubrication and a variety of functions.
