El cortador de pescado
Resumir la vida de Daniel Moranda (Madrid, 1972) no es tarea fácil, aunque podemos seguir un hilo conductor que no es otro que su pasión por el sushi. El sushi entendido como algo más que ese plato tan popular en todo el mundo a base de pescado y arroz. El sushi entendido como “un método de preservación del pescado”. Una pasión que le viene de su admiración por la cultura japonesa, inculcada por su padre y con raíces familiares, ya que su abuela materna era originaria del país del sol naciente.
El padre de Daniel, ‘El niño de San Lorenzo’, un respetado cantaor flamenco que acompañó a artistas de la talla de Paco de Lucía, Lola Flores o Antonio Gades, comenzó a viajar a Japón en los años 70 y finalmente se estableció allí durante seis años. Este nexo de unión fue lo que le llevó a Daniel a conocer muy de cerca la cultura nipona y su rica gastronomía, aunque su formación la recibió en España. Masao Kikuchi, maestro del aclamado Ricardo Sanz del restaurante Kabuki, poseedor de dos estrellas Michelin, fue quien le enseñó cuando estuvo bajo sus órdenes en el Taro Guadalpin, en Marbella. Masao Kikuchi es toda una institución en el mundo de la gastronomía japonesa y es el gurú del sushi en España. Ha llegado a trabajar en los fogones del Palacio Imperial, donde cocinó para el emperador Hirohito y su familia.
Tras su paso por el lujoso hotel Guadalpin recaló en Kabuki, fundado además de por Ricardo Sanz, por el hermano de Daniel, que en la actualidad trabaja en Nueva York. Empezó sirviendo helados, “casi de chico de los recados” según confiesa, pero su estancia de casi tres años en este dos estrellas Michelin fue su verdadera escuela.
De aquí comienza un peregrinaje por media Europa: tres años en Berlín, Montecarlo, Londres, Noruega o Italia, trabajando junto a grandes chefs. Uno de los cocineros más aclamados con los que ha compartido fogones es el italiano Alberico Penati, el responsable del exitoso Harry’s Bar de Cipriani.
En esas idas y venidas aterriza en Ibiza para comenzar a hacer sushi en el restaurante Pacha, “donde fui de los pioneros” remarca. Y así estuvo durante tres temporadas para volver a irse y regresar, hasta el día de hoy, hace cuatro años. Estaba en Holanda cuando la cadena para la que trabajaba, The Harbour Club, decidió instalarse en la isla y ¿quién mejor que él para esta tarea? Así fue como hace cuatro temporadas llegó a Talamanca y desde aquí fue fichado por el Cotton Club en 2015. Y este año ya le han dado un espacio propio en el nuevo local que el beach club ha abierto en Figueretas.
Todo el que se acerque al Cotton de Figueretas podrá disfrutar del conocimiento que Daniel ha atesorado durante 20 años cortando pescado. Y es que él se considera un “cortador de pescado”, así es como se define. Basta con verle trabajar en su barra para comprobar que todo es un auténtico ritual. Desde como envuelve el pescado , hasta la hora del emplatado, todo se realiza con el máximo cuidado. Detalles como los encurtidos que realiza para acompañar sus creaciones, la salsa de soja casera o el gengibre que utiliza le dan un toque de distinción que sirve para desmarcarse de la gran oferta que existe en la actualidad. Y eso sin olvidar el aspecto más importante, que es la destreza en el manejo del cuchillo a la hora de enfrentarse a cualquier tipo de pescado que aterrize en su encimera. Pero uno de los puntos a los que más importancia da es a la envoltura de la materia prima con la que trabaja. Estudia tipos de papeles diferentes y en sus viajes investiga nuevas maneras de envolver. Tal es su obsesión que ha llegado a indagar en las técnicas de momificación usadas en el antigüo egipto y más concretamente en la seda biso (el tejido utilizado para embalsamar a los emperadores procedente de las nacras marinas). Así nos explica como envuelve el atún, con tres tipos diferentes de papel para, por un lado conseguir que no se seque y por otro, ayudar a eliminar el exceso de sangre que pueda tener. Decimos el atún porque para cada tipo de pescado Daniel utiliza un envoltorio diferente, hasta ahí su grado de perfeccionismo.
Como colofón para intentar explicar su pasión por su trabajo contaremos su última aventura. En Enero aterrizó en Finlandia para asesorar en la apertura del primer sushi bar de Laponia finesa. Durante cinco meses viajó por el país, aprendió nuevas técnicas y trabajó con nuevos productos para la elaboración de sushi como carne de reno, gamo o ballena.

Los secretos del sushi
Según Daniel Moranda hay una serie de factores que debemos tener en cuenta ante la gran oferta de sushi que hay en la actualidad. Lo primero es nunca ir un lunes a comer esta especialidad japonesa puesto que el pescado no será fresco ya que hasta el martes no llega al mercado. Recomienda también preguntar si hay algún producto local puesto que es susceptible a ser más fresco. Hay que fijarse que el pescado brille y esté jugoso. Además el arroz no tiene que estar frío y siempre tiene que llevar wasabi.
Comenta también que el rábano que acompaña al sashimi no es un simple adorno sino que debe comerse mojado en la soja. Puntualiza que el sushi es mejor comerlo con las manos, reservando los palillos para los platos calientes y para el sashimi.

The fish slicer
Summarising the life of Daniel Moranda (Madrid, 1972) isn’t an easy task; however, we can focus on its main theme, which is none other than his passion for sushi. He understands sushi as something more than the very popular dish made of fish and rice, enjoyed throughout the world. Instead he understands sushi as “a method of preserving fish.” A passion that comes from his admiration for the Japanese culture, ingrained by his father and with family roots, given that his maternal grandmother was originally from the Land of the Rising Sun.
Daniel’s father, “El niño de San Lorenzo,” a respected flamenco singer who accompanied outstanding artists such as Paco de Lucía, Lola Flores and Antonio Gades, started travelling to Japan in the seventies and finally settled there for a period of six years. This link was what led Daniel to understand better the Japanese culture and its rich cuisine, although he completed his training in Spain. Masao Kikuchi, the teacher of the acclaimed Ricardo Sanz, chef at the Kabuki restaurant that has two Michelin stars, taught Daniel when he worked under him at the Taro Guadalpin restaurant in Marbella. Masao Kikuchi is something of an institution within the Japanese cuisine and he is a sushi guru in Spain. He even worked in the kitchen of the Imperial Palace where he cooked for Emperor Hirohito and his family.
After a stint in the luxurious Guadalpin hotel he arrived in Kabuki, founded not only by Ricardo Sanz but also by Daniel’s brother who currently works in New York. He started by serving ice creams, “I was almost a delivery boy,” he confesses, but his stay of nearly three years in the two Michelin star restaurant was his true schooling.
From here he started a pilgrimage across half of Europe: three years in Berlin, Monte Carlo, London, Norway and Italy, working alongside great chefs. One of the most renowned chefs who he shared a kitchen with was the Italian Alberico Penati, the chef responsible for the success of Cipriani’s Harry’s Bar.
In his comings and goings he touched down in Ibiza in order to start making sushi in the Pacha restaurant, “where I was one of the pioneers,” he emphasises. He was leaving and returning for three seasons, until four years ago he decided to stay. He was in Holland when the chain that he worked for, The Harbour Club, decided to settle on the island, and what better candidate for the task than him? This is how four seasons ago he arrived in Talamanca, from where he was recruited by the Cotton Beach Club in 2015. That same year he was given his own space in the new local that the beach club had opened in Figueretas.
Everyone who visits the Cotton in Figueretas can enjoy the skills that Daniel has accumulated over 20 years of slicing fish; this is why he defines himself as a “fish slicer”. One look at him working at his worktop is proof enough that everything he does is a genuine ritual. From how he wraps the fish to when the sushi is plated up, everything is done with maximum care. Details like the pickles that he makes to accompany his creations, the homemade soy sauce or the ginger he uses add a refined touch that makes his sushi stand out among the wide culinary offering that there is today. We best not forget the most important aspect, that is his ability to handle the knife while slicing whatever type of fish that is thrown at his worktop. However, one of the points that he gives most importance to is the thin material that he uses to wrap the fish. He studies different papers and on his travels he explores different types of wrapping. Such is his obsession that he has started to look into the mummification techniques used in Ancient Egypt and more specifically the byssus silk (the fabric made from nacre used to embalm Emperors). He then explains how he wraps the tuna, using three different types of paper, firstly to ensure that it doesn’t dry out and secondly to help to absorb the excess blood that it might have. We state that it’s tuna because for every type of fish Daniel uses a different wrapping material, which is yet another example of his degree of perfectionism.
In closing, we’ll recount his last adventure to try to explain his passion for his work. In January he landed in Finland to advise on the opening of the first Finnish sushi bar in Lapland. During five months he travelled through the country learning new techniques and working with new products to prepare sushi, such as reindeer meat, deer meat and whale meat.

Sushi secrets
According to Daniel Moranda, there’s a number of factors that we must take into account in face of the large choice of sushi that is being offered today. His first advice is that you should never eat this Japanese speciality on a Monday because the fish won’t be fresh, given that it doesn’t arrive at the market until Tuesday. He also recommends asking for local products because they’re likely to be fresher. You must check to see that the fish is shiny and succulent. In addition, the rice must not be cold and it must always be seasoned with wasabi.
He also comments that the radish that accompanies the sashimi isn’t simply for decoration but that it should be eaten soaked in soy sauce. He points out that it’s best to eat sushi with your hands, saving the chopsticks for hot dishes and the sashimi.

La vitalidad del océano Atlántico baña las soleadas costas canarias, donde deportes enérgicos como el surf o el kitesurf bailan al compás del viento y las olas, mientras que la variopinta biodiversidad de los fondos marinos invita a una apacible jornada de buceo.
Surf, buceo, windsurf, vela, kayak… Cualquier deporte que tenga el agua como denominador común es practicable en las islas Canarias. Así de simple, no es broma. Un sol que no distingue entre otoño o primavera, entre invierno o verano, y brilla casi todas las fechas del año en solidaridad con los turistas; un viento que sopla con el justo brío y la necesaria mesura; un oleaje que impone su autoridad pero deja el suficiente espacio para ser cortejado; una temperatura media anual que ha fijado su listón máximo en la templanza de los 20 grados centígrados; kilómetros de costa, costa y más costa; y unos fondos marinos que parecen una pintura al óleo a escala natural, han convertido al Archipiélago canario en un auténtico polideportivo acuático. Y su oferta de actividades es amplia, con las mejores infraestructuras y monitores, para todas las edades y para todos los niveles... ¿Te animas a inscribirte en alguna de ellas y disfrutar en los dominios de Poseidón de forma activa, aventurera y divertida?
Con adrenalina
Los aficionados a liberar la adrenalina más refrescante dentro del ritmo frenético de las olas y el viento encuentran en múltiples playas de Canarias sus santuarios para la práctica del surf, windsurf, kitesurf y bodyboard. En Tenerife, la playa de El Médano, de arena tanto en la orilla como mar adentro, es ideal para los que quieran dar sus primeros pasos en una tabla de windsurf, surf o bodyboard, mientras que su vecina El Cabezo exige un alto nivel alto de experiencia debido a sus fuertes corrientes ventosas y de oleaje y las rocas presentes. Además, los amantes de volar sobre el agua, o lo que es lo mismo, hacer kitesurf, también están de enhorabuena en El Médano, donde la fuerza del viento es apta para todos los niveles. Asimismo, cerca de La Tejita, en la parte conocida como La Machacona, la calidad de las olas invita a los expertos en bodyboard a desplegar sus habilidades. Playa de Las Américas, uno de los principales núcleos turísticos de la Isla, guarda zonas en su litoral para realizar surf y bodyboard en una dificultad intermedia, que suben su peligrosidad con el mar de fondo. Eso sí, sus olas hacen las delicias de los deportistas.
En Gran Canaria, las playas de Vargas, Pozo Izquierdo y Salinas del Pozo son perfectas para el windsurf, si bien es cierto que tan solo la primera, y únicamente en los días en los que el mar y el viento están más dormidos, es adecuada para principiantes. Por norma general, se requiere un nivel medio o experto para lanzarse al agua sin riesgo. Vargas y Salinas del Pozo también se llenan de cometas con el sello del kitesurf, con las mismas condiciones ya nombradas: una a partir de iniciados, la otra para deportistas con experiencia. Para surfear, en modo experto, basta dejarse envolver por las olas características de El Confital, en la capital, Las Palmas de Gran Canaria, playa en la que también se puede practicar bodyboard con garantías.
En Fuerteventura, la playa polivalente es Sotavento, con una orilla kilométrica de arena blanca, aguas cristalinas y vientos constantes. Excelente para el windsurf y el kitesurf, es apta para todos los niveles. Además, El Burro tiene perfectas condiciones para iniciarse en las cuatro disciplinas, mientras que en la isla de Lobos, un paraíso natural, se sitúa la ola más larga de las islas Canarias.
Con más calma
Canarias presume de uno de los mejores fondos marinos del mundo. Bello, cautivador, de una gran diversidad… Descubrirlo en alguno de sus numerosos puntos de inmersión en una experiencia inolvidable. En Tenerife, se puede bucear entre las tortugas en el Puertito de Armeñime, de escasa profundidad e ideal para sumergirse en familia, o en el Faro de Rasca, donde los más especializados nadan entre la orografía volcánica submarina más insólita, plagada de corales y fauna marina. Asimismo, para sorprenderse con espectaculares paisaje rocosos, vale la pena remar con un kayak a los pies del acantilado de Los Gigantes.
En Gran Canaria, el fondo marino de Playa Grande, en Las Canteras, se presta a bautizar a los principiantes en buceo, así como la playa de Risco Verde. Para los más experimentados, sumergirse para presenciar el pecio del barco hundido Plasencia es una buena opción. En Fuerteventura, los mejores puntos de inmersión son El Bajón del Río, para expertos, y El Jablito, para principiantes.
Por supuesto, en los alrededores de todas las zonas de práctica de deportes acuáticos en Canarias existen empresas especializadas con materiales, asesoramiento y cursos de formación. Ahora, solo queda darse el chapuzón más deportivo en las aguas del océano Atlántico.

The Atlantic Ocean’s vitality laps the sunny Canarian coasts where extreme sports like surfing or kite surfing are practised to the rhythm of the wind and waves, whilst the sea bed’s varied biodiversity inspires a calm day of diving.
Surfing, diving, windsurfing, sailing and kayaking…Any sport that involves water is doable on the Canary Islands. It’s not a joke, it really is that simple. A sun that doesn’t discriminate between autumn and spring or between winter and summer, that shines brightly all year long in unity with the tourists; a wind that blows with the right spirit and the necessary speed; a swell that imposes its authority but allows a sufficient amount of space to be captivated; an average annual temperature of a mild 20 degrees Celsius; kilometres of coastline, coastline and more coastline; and some sea beds that are similar to an oil painting on a natural scale, they have converted the Canarian Archipelago into an natural water sports centre. It offers a wide range of activities for all ages and all levels, with the best infrastructures and instructors. Don’t you want to sign yourself up for some of these activities in order to enjoy Poseidon’s territory in an active, adventurous and fun way?
Adrenaline sports
Inside the wild rhythm of the waves and the wind the most refreshing adrenaline junkies will find their sanctuaries to practice surfing, windsurfing, kite surfing and body boarding on many of the Canarian beaches. In Tenerife, the El Médano beach, as sandy on the seashore as it is in the water, is ideal for those who want to have a go at windsurfing, surfing or body boarding. Whilst its neighbour El Cabezo requires a higher level of experience due to the strong windy currents and swells and the large rocks. In addition, the lovers of flying on the water, or as we say kite surfing, are also in luck on El Médano where the wind speed is apt for all levels. Likewise, close to La Tejita, in the area known as La Machacona, the quality of the waves invites body boarding experts to display their skills. The Las Américas beach, one of the Island’s main tourist hubs, maintains different zones on its coastline that can be dangerous due to the groundswell, but to surf and body board at an intermediate level these waves can truly delight the experienced surfers.
In Gran Canaria the Vargas, Pozo Izquierdo and Salinas del Pozo beaches are perfect for wind surfing, even though it’s true that it’s only adequate for beginners on the first beach, and only on days when the sea and the wind are at their calmest. As a general rule it requires an intermediate or expert level to be able to dive into the water without risk. Vargas and Salinas del Pozo are also full of kite surfers, with the same conditions already mentioned; the first is perfect for beginners and the other is for kite surfers with experience. In order to surf at an expert level the waves typical of El Confital beach should be enough; found in the capital of Gran Canaria, Las Palmas, you are also guaranteed to be able to practise body boarding there.
In Fuerteventura the versatile beach is Sotavento, with its kilometres of white sandy coastline, crystal waters and constant breezes, it’s excellent for windsurfing and kite surfing and is perfect for all levels. In addition, El Burro has perfect conditions for beginning the four water disciplines, whilst on the natural paradise that is the island of Lobos you will find the biggest waves of all the Canary Islands.
Calmer water sports
The Canaries boast one of the best sea beds in the world. Beautiful, captivating and very diverse… Discover it from one of its many immersion points for an unforgettable experience. In Tenerife you can dive amongst the turtles at the Puertito de Armeñime beach. You can dive to a shallow depth which makes it ideal for families or in the Faro de Rasca the more specialised swim amongst the most unusual submarine volcanic orography, chock-full of coral and marine fauna. Just as surprising is the dramatic rocky scenery, worth exploring with a kayak from the foot of the Los Gigantes cliff.
In Gran Canaria the sea bed of Playa Grande in Las Canteras, provides the perfect setting for diving beginners, just like Risco Verde beach. For the more experimental a good option would be diving to explore the sunken shipwreck of Plasencia. In Fuerteventura the best points of diving are the Bajón del Río for experts and El Jabito for the beginners.
Of course, not far from the areas mentioned for practising water sports are specialised shops that offer materials and equipment, advice and training courses. Now, the only thing to do is dive into the Atlantic Ocean’s sportiest waters.
