Translation - English Classic Yule Log
The famous Yule Log in all its splendor! A indispensable recipe in the run-up to the end of year celebrations. This one is buttercream but obviously, it can also be prepared with cream of chestnuts.
Ingredients:
Number of servings: 15
For the sponge cake
4 eggs
1 C. of caster sugar
1 C. of flour
For the buttercream
2/3 C. of butter
7oz. of pastry chocolate
2 tablespoons cognac
5 egg yolks
3/4 C. icing sugar
4oz. milk
Marzipan cut into stars
Icing sugar to sprinkle
Fat to grease the cake pan
Wax paper
1. Grease a 9 x 13in rectangular cake pan or line it with parchment paper. Preheat oven to 450F.
2. Separate the egg whites from the yolks. Work the yolks in with the sugar until you have a frothy mixture. Beat the whites into stiff peaks. In alternation with the flour, incorporate in the mixture of egg yolks and sugar. Spread the dough in the pan and cook for 10 minutes in the preheated oven until the cake is lightly golden brown.
3. Moisten a clean kitchen towel. Cut a piece of wax paper the size of the baking tin and place it on the cloth. Sprinkle with icing sugar.
4. Turn out the sponge cake on the cloth and remove the piece of parchment paper used for cooking. Neatly trim the edges. At an inch from the short sides of the rectangle, make a light cut with a knife over the entire width of the cake.
5. Using the tea towel, roll the biscuit with the wax paper. Cover and let cool.
6. Meanwhile, place the butter in a place warm enough to soften. Break the chocolate into small pieces, add the cognac and melt everything in a double-boiler.
7. With an electric hand mixer or by hand whisk the egg yolks with the sugar until the mixture is frothy. Heat the milk and add it to the egg/sugar mixture without stopping.
8. Continue to whisk in a cold water bath until the mixture has cooled. Stir in softened butter and melted chocolate. Unroll the cake and remove the wax paper.
9. Spread half of the buttercream on the cake. Re-roll the cake and place on a serving platter. Fill a piping bag with the rest of the butter cream. Select a star-shaped tip and pipe buttercream along the length of the log. Decorate with the marzipan stars.
