Source text - Russian Халва – удивительный десерт родом из Персии. Настолько удивительный, что почитается персами, как магический. Чтобы выяснить, причем здесь магия, и почему к халве на Востоке особое отношение, мы отправились…нет, не в Персию, а в Тверь.
Местные кандалатчи, мастера по приготовлению халвы, делают ее по старинному восточному рецепту. Все начинается с семечек. Обычно их высушивают горячим воздухом, но если речь идет о старинном рецепте, очищенные от лузги семена необходимо обжаривать, причем исключительно на чугунной жаровне.
Только тогда у семечек появится золотистая корочка и неповторимый запах. Важно постоянно мешать семена. Если они подгорят, халва будет горчить. Во время жарки из семян подсолнечника выпаривается почти вся влага, зато количество полезных масел не уменьшается. Каждая семечка наполовину состоит из масла.
В этом легко убедиться, если взять ядро, положить его между двух листов бумаги и ударить молотком. Оставшееся на бумаге жирное пятнышко – чистое растительное масло. Кандалатчи отправляют жаренные семечки в экструдер, который тщательно перетирает ядра, превращая их в белковую массу.
Маслянистая паста из дробленых семян называется халвин. Это основа старинного рецепта. Пасту перетирают несколько раз, пока она не станет жидкой, как сгущенка. Затем, следуя восточному рецепту, мастера добавляют немного ванили. Интересно, как это тягучую массу кандалатчи превратят в твердые кусочки халвы? Для этого нужно приготовить карамель. Сначала специалисты варят сироп из воды, сахара и патоки. Она помогает полностью растворить кристаллики сахара и делает будущую халву пластичной. Готовый сахарный сироп должен быть густым и тягучим. Чтобы превратить сладкую массу в карамель, кандалатчи добавляют отвар мыльного корня.
Корень средиземноморского растения с мыльным названием содержит сапонины – вещества, образующие при взбалтывании густую белую пену. Для приготовления халвы отвар мыльнянки смешивают с сахарным сиропом и взбалтывают в стойкую пену. В результате получается карамель снежно-белого цвета. А вот теперь действительно начинается магия. Карамель соединяют с халвином. Обратите внимание, пока ингредиенты для приготовления халвы очень жидкие. Как десерт станет твердым и рассыпчатым? В этом и заключается волшебство. Будущую халвы тверские кандалатчи вымешивают веслами, точь-в-точь, как это делали на Востоке много веков назад. Хитрость заключается в том, чтобы во время вымешивания бережно вытягивать нити карамели, тогда халва получится воздушной и волокнистой.
Если бы массу вымешивал миксер, он бы порвал хрупкие карамельные нитки, сделав десерт рассыпчатым как песок. Шоколадную халву тоже вымешивают вручную, здесь важно не перестараться, иначе сладость получится не воздушной, а жесткой. Чтобы правильно работать веслами, местные мастера специально ездили за старинной наукой в Турцию. Там, кстати, делают халву из сим-сима. Сим-сим или сезам – это кунжут, из него получается тахинная халва. В России кунжут не растет, поэтому мы делаем десерт из семечек подсолнечника, кстати, его родина тоже далеко – в Северной Америке. Правда, на местных широтах подсолнух, привезенный Петром 1 все же прижился.
После вымешивания, халва полностью готова. Свежий воздушный десерт оперативно раскладывают по коробочкам. Для тех, кто любит послаще, из халвы делают конфеты. Сначала формируют ровные кирпичики, а затем покрывают их толстым слоем шоколада. Чтобы глазурь не разламывалась, излишки сдувают потоком воздуха. Всего несколько минут и восточный десерт превращается в необыкновенные конфеты, внутри которых и семечки, и карамель, и шоколад.

Local candalatchi, masters in making halva, use an ancient Eastern recipe. It all starts with the sunflower seeds. Usually, the candalatchi use hot air drying, but in ancient recipe they use cast iron roaster to roast hulled seeds.
By doing so, the seeds will get a golden brown crust and a unique flavor. It is important to constantly stir the seeds to prevent them from burning, which may cause bitterness. During this process, almost all the moisture is evaporates from the seeds, but the useful oils remains. Each seed contains about 50 percent oil.
If we place the kernel between two sheets of paper and hit with a hammer, we'll see a pure vegetable oil patch. Candalatchi send roasted seeds into an extruder, which carefully grinds the seeds into a smooth protein mass.
This is Halvin, which is the basis of the ancient recipe. Masters grind it several times to create a smooth paste, resembling condensed milk. Then, according to the Eastern recipe, the masters add a pinch of vanilla. But how Candalatchi would turn this fluid mass into the solid pieces of halva?
To do so, they need to make caramel. First, masters mix together water, sugar and molasses to make syrup. It helps to dissolve the sugar crystals and makes halva elastic. Sugar syrup should be thick and viscous. Candalatchi add soup root infusion to make caramel from the sugary mass.
The root of the Mediterranean plant, which reminds us of the soup, contains saponins, the foaming characteristics. According to the recipe, masters mix the soup root infusion with sugar syrup, and whip until thick and foamy. As the result they get snow-white caramel.
At this point real magic starts. They mix together caramel and halvin. Pay attention that all of the ingredients are liquid. How will the dessert become solid and flaky? That's the real magic. The Candalatchi use oars to beat the halva, the same as ancient masters of the east used to do it centuries ago. During the stirring process, they should gently pull the fibers of caramel, then the halva gets airy and fibrous.
If they used mixer, the caramel fibers would tear, making halva as flaky as sand. Chocolate halva is also mixed by hand. Here it is important not to overdo it, otherwise the dessert will become too solid. In order to learn how to use oars properly, local masters have traveled to Turkey. Speaking of Turkey, there they make halva from sim-sim or sesame. Halva made from sesame is called tahini halva. We don't grow sesame Russia. Thus, we make halva from sunflower seeds. By the way, sunflower also comes from far away, from North America. Peter the Great brought the sunflower to Russia, and it has taken root here.
After mixing, halva is done. Then they pack the airy dessert in boxes. Those who like it even sweeter should try candies made from halva. First, masters form tiny bricks, and then cover them with a rich layer of chocolate. To prevent chocolate glaze from cracking, they blow away the excessive chocolate with hot of air. It takes only a few minutes to turn the eastern dessert into an extraordinary candy, which contains seeds, caramel, and chocolate.
