La frutilla es una fruta de moderada a alta tasa respiratoria, lo que determina su reducida vida post-cosecha, por lo que una vez cosechada debe ser enfriada lo más rápido posible para disminuir su metabolismo. Además, presenta una baja producción de etileno y un comportamiento no climatérico, debiendo ser cosechada con una coloración y madurez adecuadas (posterior a la cosecha no se estimula el proceso de maduración). Debido a lo anterior es difícil determinar el momento de cosecha, ya que por una parte la fruta debe tener una coloración atractiva, pero mientras más se acentúa esta característica, mas se ve afectada su postcosecha, disminuyendo notoriamente la calidad.
A continuación se presentan los resultados obtenidos en las evaluaciones realizadas durante la postcosecha, con muestras que fueron sometidas a conservación a 5ºC, desde la cosecha hasta la aparición de los primeros síntomas de pudrición.
Translation - English Post-Harvest Assessments
The Chilean strawberry is a fruit with a moderate to high respiratory rate which determines its short life post-harvest, and which is why, once harvested, it should be chilled as soon as possible in order to decrease its metabolism. Furthermore, it exhibits low ethylene production and non-climacteric comportment requiring harvesting when the color and ripeness are suitable (the ripening process is not stimulated following harvest.) Consequently, it is difficult to determine the harvesting time since on the one hand the fruit should have good color, but the more this aspect is emphasized, the more it is affected post-harvest notably decreasing the quality.
Shown below are the results obtained through the assessments carried out during the post-harvest, with samples that were subject to preservation at 5ºC from the time of harvest up until the appearance of the first symptoms of rotting.
