Effilée de bœuf à la crème de céleri


Ingrédients :

- 600g de queue de jeune bovin en morceaux
- 30g de copeaux de parmesan
- 30g d’échalote
- 300g de céleri-rave en morceaux
- 1 tomate
- 40g de pâte feuilletée
- 2 c à soupe d’huile d’olive
- quelques branches de cerfeuil
- 1 litre de bouillon végétal
- quelques feuilles de laurier
- sel et poivre


Recette :

1°- Faire tiédir l’huile d’olive dans l’autocuiseur, ajouter la queue de bœuf et faire dorer. Ajouter le bouillon, le céleri, l’échalote, la tomate et le laurier. Fermer et cuire 50 minutes à partir du chuchotement de la soupape.

2°- Pendant ce temps cuire à four chaud pendant quelques minutes des bâtonnets découpés dans la pâte feuilletée.

3°- Ouvrir et retirer la queue de bœuf et le céleri. Filtrer le bouillon et le garder au chaud. Mixer le céleri chaud pour obtenir une crème. Emietter (effiler) la queue de bœuf et poser-la sur les assiettes. Ajouter quelques cuillères de bouillon et décorer avec le cerfeuil.

4°- A part dans une tasse servir en accompagnement la crème de céleri tiède parsemée de copeaux de parmesan et de petits feuilletés.

Rundvlees met selderiesaus


Ingrediënten:

- 600 gr. in stukken gesneden kalfsstaart
- 30 gr. geraspte parmezaankaas
- 30 gr. sjalotjes
- 300 gr. knolselderie, in stukjes gesneden
- 1 tomaat
- 40 gr. bladerdeeg
- 2 eetlepels olijfolie
- een paar blaadjes kervel
- 1 liter plantaardige bouillon
- een paar laurierblaadjes
- zout en peper


Recept:

1°- Verwarm de olijfolie in de snelkookpan, doe de stukken kalfsstaart erbij en bak ze aan. Voeg de bouillon, de selderie, de tomaat en de laurierblaadjes toe. Sluit de pan en laat vijftig minuten koken vanaf het moment dat het klepje begint te sissen.

2°- Snijd ondertussen staafjes van het bladerdeeg en bak deze een paar minuten in een warme oven.

3°- Open de pan en haal de stukken kalfsstaart en de selderie eruit. Zeef de bouillon en houd hem warm. Mix de warme selderie zodat u een romige saus krijgt. Snijd de stukken kalfsstaart in dunne plakjes en leg ze op de borden. Schenk er een paar lepels bouillon over en versier ze met de kervel.

4°- Serveer de lauwwarme selderiesaus bestrooid met geraspte parmezaankaas en stukjes bladerdeeg apart in een kom.

I am a freelance translator, subtitler and teacher.
