食道静脈瘤: esophageal varices [varix], esophagus varices
... で死ぬ: die of ...

Since the cause of death is disease, ¥"die of ...¥" would be better than ¥"die from ...¥", but ¥"die from ...¥" could be used also.

agree Peter Coles : However the OED prefers "oesophageal" or "oesophagal". It may be that the American spelling has been simplified by dropping the initial "o". I recommend that you check a medical dictionnary in your target dialect of English.
