French term

compotee de pied au pistou

French to English Other Cooking / Culinary
cotelettes d'agneau roti, compotee de pied au pistou

A menu item. I know that "pistou" is a provencal sauce, and would leave this unchanged, but the "compotee de pied" has me stuck.

thanks My gut reaction is that it is probably "pied de cepes", but I'll check with the client and let you know!

To make pistou you need "un pied de basilic"

My (former chef) husband says that there's a word missing, and that it is probably a vegetable, or a mushroom, if it's part of the lamb dish, as a garniture.
Elizabeth Lyons Apr 22, 2005:
I agree and would normally think "pig's feet", but could it be the lambs's
[:( ]feet? And could the pistou be a jellied version? Like jellied hooves?

I agree with Dusty
