Respondent by itself means "demandado" in this particular case, it means to whomever the request is being sent to. I believe in this case you may want to use "el respondiente" because the RFP can be sent to both the Defendant and the Palintiff in a lawsuit.

Si es concerniente a juicios o términos legales la palabra es "demandado". Si no es asi, se puede usar respondedor o persona respondiente (ambas palabras son correctas en castellano.
