Besides, what does "You are so quiet" mean in this case? That the person IS ALWAYS QUIET? That the person looks very QUIET AT THIS VERY MOMENT?

If we imply that the person in question is quiet NOW, AT THE MOMENT, then the translation is ESTAS MUY ...
However if we imply that the person is ALWAYS quiet, thenthe translation should be: ERES MUY... callado, tranquilo, reservado, silencioso... or
