In these matters, it all depends pretty much on the organizational culture. However, at least in South America, the term used most frequently when referring to the position directly below that of a manager is Subgerente.

Creo que la reponsabilidad que se menciona no es la de un Sub-Gerente o Sub-director. Estos cargos tienen nivel ejecutivo, y pareciera que en este caso es un ayudante (asistente) quien tiene solo tareas administrativas (realizar el inventario). Espero sea de ayuda.
