Corkage charges will apply to cover service, breakage and cleaning linked to the service of your own wines on application.

(potentieller) Glasbruch

The corkage fee covers service (but not tips/service charge), wine glass breakage/rental and some of the lost revenue from not selling a wine off the restaurant's list.

Restaurants have to buy and wash glassware, and breakage is a real issue, particularly for restaurants like Martini House and La Toque which use expensive Riedel glassware that require special handling like buffing by hand.

Many patrons don't really appreciate the cost of the glassware, labor and breakage, too. One local restaurant told me that they spend $300 per month in glasses and decanters, though that sounds pretty high.

agree Colin Rowe : I find myself leaning towards this answer for 2 reasons: 1) juxtaposition of breakage and cleaning; 2) see response to Goldcoaster

Peer comment(s):

neutral Colin Rowe : Whether or not this is a possible interpretation may depend on how strictly orthodox the customers in question are. Wine *opened* by a gentile waiter/sommelier may be deemed to be no longer kosher...
