Hab' zwar nichts gegen Glasbruch aber ich glaube hier ist das Öffnen ("Anbrechen", "(break) open" der Flasche gemeint.

: Whether or not this is a possible interpretation may depend on how strictly orthodox the customers in question are. Wine *opened* by a gentile waiter/sommelier may be deemed to be no longer kosher...
