di una grande tradizione
L'Italia anticamente era chiamata Enotria, terra del vino. Un nome che potrebbe essere valido ancora oggi, visto che l'Italia – con la Francia e la Spagna – è in testa alla classifica dei produttori mondiali (forse non tutti sanno che questi tre paesi insieme producono ogni anno il 50 per cento di tutto il vino prodotto nel mondo).
Tutte le Regioni italiane – dalla Valle d'Aosta alla Sicilia - sono produttrici di vino. Ma il leader assoluto, seguito da Puglia e Sicilia, è il Veneto; primo come quantità di vino in genere (oltre otto milioni di ettolitri) e primo anche nella produzione di vini a denominazione di origine controllata (D.O.C.), con quasi il venti per cento del totale Italia.
Un duplice primato, che affonda le radici nella tradizione e si rafforza anno dopo anno grazie alla continua ricerca della qualità, dal vigneto alla tavola. Nasce tra i filari, matura nelle cantine finché completa il suo percorso a tavola, meglio se affiancato ai piatti tipici e ai prodotti del territorio. Fare vino non è un’operazione meramente produttiva ma un percorso legato alla conoscenza della terra, delle viti, delle uve, delle loro qualità organolettiche. Il processo di maturazione viene seguito passo passo, dalla selezione dei vitigni ai trattamenti sanitari fino alla vendemmia.

Olaszországot régen Enotriának, vagyis a bor földjének nevezték. Ez a megnevezés akár manapság is érvényes lehetne, hiszen Olaszország¬, Franciaországgal és Spanyolországgal együtt a világ legfontosabb termelőinek egyike. (Talán nem mindenki tudja, hogy e három országban együttesen előállított bor mennyisége a világ éves termelésének 50%-át teszi ki.)
Minden olasz tartomány, Valle d’Aostától Szicíliáig, jelentős bortermelést tudhat magáénak. Közöttük abszolút élen jár Veneto a bor mennyiségét (több mint 8 millió hektoliter) és a legtöbb D.O.C. minőségű bor előállítását tekintve, mely az összolaszországi termelés majdnem 20%-át alkotja.
E kettős vezető szerep a hagyományokban gyökerezik, és évről évre egyre erősebb lesz annak a folyamatos kutatómunkának köszönhetően, mely a bort a szőlőtőkétől az asztalig kíséri. A kiváló minőség a szőlőtőkék közt születik, a hordókban érik meg, míg végül az asztalra kerül, ideális esetben a helyi tipikus ételek kísérőjeként. A borkészítés nem kizárólag termelő tevékenység, hanem egy olyan folyamat, mely szorosan kötődik a termőföld, a szőlőnövény, a szőlőfajták tulajdonságainak ismeretéhez. A szőlő érését lépésről lépésre figyelemmel kísérik, a szőlőfajták kiválasztásától a permetezésen át egészen a szüretelésig.
