sono d'accordo con D'Alessandro. Italian does not use capitals to the extent English does. Things are changing, though, under the influence of English, I suppose. On the net you will find all kinds of usages, but in this case I would stick to the manuals: bergamasco is an adjective, so it does not need capitalization.

I agree with the second answer (cane da pastore bergamasco), but "pastore bergamasco" is enough, the context is clear, I think it's the best solution.
