English term (edited): when kicking steps

C'est bien ce que Rousselures dit. Ce n'est pas uniquement en alpinisme mais aussi en telemark, ski de randonnée... Je ne crois pas qu'il y ait une manière précise de le dire
en français, je crois que tu dois l'adapter à ton texte:

...quand vous marchez dans la neige en faisant/créant/taillant des marches
...quand vous faites/taillez des marches dans la neige
