Certainly, in ordinary plumbing, this kind of "fitting" would be a "raccord"
As for "gripper", that's a bit more tricky! I can only assume it means they clip together and hold fast by themselves, without any other external locking device (ring, bayonet, etc.) — hence my suggestion of "enclipsable", or perhaps "enclenchable" might be better; or of course "à enclenchement" ("à clipsage / à clipser" ?!)

I did also just wonder about variations on "emboît..." ?
