Do you say "my dentist" the same way regardless of gender? Can it be written using the Roman alphabet? Thank you!

Môj zubár (=male), Moja zubárka (=female)
These two expressions are on the informal side, used by the majority of people in everyday conversation. However, more formal expressions would be: Môj dermatológ (=male), Moja dermatologička (=female), although you could actually use the former one (dermatológ) for both genders as well, unless the gender is specifically significant in the context.

There is no way to translate my dentist regardles gender definitely. However, if you translate "môj zubár" it can cover also female in some way. Never translate it dermatológ, it is something completely different.
