Comment: "In view of the information contained in this table, I think ‘breakdown of sales’ (alternatively ‘by category’) best reflects the idea of 'what' was sold. My misgivings about 'structure' were that this term suggests the 'who' and the 'how'. Thank you all for your suggestions."

the question is Umsatzstruktur as a table header, not the other column headings of Mio or %; channels are the rows (I believe you refer to them 'segments' or 'categories')

Why not simply turnover structure? It is widely used and seems appropriate here.
Further, you could say business structure (Umsatz can also be "business").
