Shear is the term used to describe the mechanical action of the extruder on the maize/water mixture. Generally shear is the application of opposing frictional forces to the top and bottom of a particle. This is what happens to the product when forced between the small gap between the rotating screw flights and the stationary barrel. The high shear area of the extruder, is before the reverse elements and the die head, generating heat as the mechanical energy is dissipated. In this area, most of the cook is achieved in the extruder due to high temperatures enabling water uptake and mechanical action breaking apart the starch granule.
