le postérieur = the hind limb; the horse is putting its weight on one hind limb when it rests rather than shifting periodically from one hind limb to the other. Probably doesn't want to rest its weight on the other limb when standing because of pain, weakness, lack of control, etc., on that side. Hope this helps!
