Hi all,

I am translating documentation two phrases that I cannot seem to get my head around.

With regards to azúcares finales would the correct translation be end sugars or fermentable sugar?

I have no translation for azúcares medios.

(Both are related to oenology and the sugars you find in the fermentation process of the grape to produce wine)

Or "residual sugars - medium sugars". I'd ask the client to verify it if possible, since I am guessing.
The decision to harvest grapes is typically made by the winemaker and informed by the level of sugar (called °Brix), acid (TA or Titratable Acidity as expressed by tartaric acid equivalents) and pH of the grapes. "Final" or residual sugars would be from the end of the ripening process and medium or mid-sugars would be from halfway through.

As liz notes, we really need to know what they are referring to specifically (the grape per se, or part of the winemaking process) - which would mean asking the client or author.

It could also refer to the "cata" o tasting, since people are least sensitive to the taste of sweetness (in contrast to sensitivity to bitterness or sourness) with the majority of the population being able to detect sugar or "sweetness" in wines between 1% and 2.5% residual (or "final") sugar.

NB: IMO, "medios" could also mean "average" as in "average sugar content" (contenido medio en azucar)...
