those of open heart and mind*
"I thank you for wishing to give (to) those of open heart and mind........ (I'd go for BOTH heart and mind - why not?)
I think that by using "those" you avoid the gender loaded "mankind". and the slightly clumsy sounding alternative "humankind"
* ".... to give those WITH open heartS and mindS...." could also work, although I think "of open heart and mind" flows better.

\"Open hearted\" (anche senza trattino) significa sincero, franco, aperto, schietto, magnanimo, generoso

--------------------------------------------------
Open minded, invece, vuol dire di mentalità aperta, di larghe vedute

Avevo pensato anche a \"whole-hearted\" o \"kind-hearted\", ma traducono \"di buon/tutto cuore\".

Ok, quindi \"human beings\" al posto di \"men\" ;) (ma \"people\", no?)

: Open-hearted as an adjective should always be hyphenated according to the Oxford.

humans/people who hearts have been opened
or,
those with an open heart and soul
mind doesn't seem to fit in here...
I can't imagine this is limited to males only??? Seems strange...
