Does this mean "out in the country(side)" (as opposed to the city) or "around the country", i.e. in various places in the country? Native speaker's advice appreciated.

This strikes me as the most natural way to express this in English. They are not saying that this happens everywhere in the country, just in various places in Sweden, including Linköping. I agree with your 'various places'.

: I think that "around the country" hits this on the head. If the point was to express in various places you'd be much more likely to find "i vissa delar av landet", but it is just a question of shades of meaning.
