Don't know if there's a more specific term, but that's what I understand it to mean — a polyethylene cutting table for fish, complete with a spray head used for flushing and rinsing (you know the sort of thing, a bit like a shower handset, or those things used for rinsing in domestic and professional washing-up sinks etc., usually hanging from a stalk with a flexible hose, readily at hand)
