De acordo com o Aurélio e Aulete Virtual (dicionários), galvanização é cobrir um metal com outro OU cobrir um metal com zinco.
In English, galvanization/galvanize means to cover a metal with zinc (Merriam-Webster, Dicionary.com, Wordweb dictionary).
Plate - Coat with a layer of metal (Wordweb).
Plate - b : to cover with an adherent layer mechanically, chemically, or electrically; also : to deposit (as a layer) on a surface (Merriam-Webster).
Plate - to coat (metal) with a thin film of gold, silver, nickel, etc., by mechanical or chemical means (Dictionary.com).
So unless you know for a fact that they are going to coat the metal with zinc, you should say plate, not galvanize.
