"TOITURES
La toiture sera constituée d'une couverture en plaques sous-tuiles avec tuiles de couvert et/ou toitures terrasses carrelées, suivant plans du permis de construire."

You can see what these are if you search for images. I just don't know the name: "undulating roof tiles" or something to that effect ...

@ Chris Sorry, I guess I'm just projecting the very dismissive opinion of my traditional local French roofer!
But it does look a bit like cardboard — and it obviously makes for quick, cheap construction. I did actually recommend my EN neighbour to use it for his verandah...

@ Tony I wouldn't describe using Onduline as "cheap and nasty", but rather as an ingenious way to ensure the roof is watertight with modern materials with half the quantity of tiles used, no change in appearance and reduced weight on the charpente. Actually, I think the faux tile effect works quite well (from a distance)! // Of course, I meant Canalite, not Onduline !

As for 'toiture', no, really and truly, 'toiture' is 'roofing' — the abstract concept, whereas 'couverture' is 'roof covering — the physical embodiment; but you can simplify that in EN with something like 'the roof will be covered using/in...'

Ah, in fact, there's an 'either / or': the roofing will consist of either... or... You might be able to say 'a covering of...', though that's a bit too literal for my taste.

@ Asker Not really 'undulating', which just describes the appearance; this is in fact a cheap and nasty construction technique where your waterproof roof is actually corrugated fibre sheets, with purely decorative 'Roman' tiles pretty much just placed on top. Quick and dirty solution!

Imbrex tiles

The name is Roman and these barrel-shaped tiles were used to bridge 'tegula', which were flat tiles. Britannica reference below. My father was a surveyor and used to refer to these as 'mission-style' tiles. I think the name reflects the fact that mission buildings were frequently hastily erected, exactly as Tony M says. I am linking to an article which has a couple of sketches, one of tapered tiles and one of barrel-shaped tiles.
Wikipedia refers to "Monk and Nun" tiles - see reference, also below.

disagree Tony M : But that's just referring to the 'Roman' or 'canal' tiles; here, we are specifically talking about the system that uses a corrugated substrate (the 'plaque' in the question) for watertightness, and incidentally uses those tiles on top of it.

roofing plates

In the topic of building roofs and various possibilities of types of roofing available 'plaques sous-tuiles' are a type of roof covering. Since 'sous' is a preposition meaning 'underneath' it looks like the roofing plates go underneath another type of covering such as roof tiling, which replaced the old-fashioned slates.
Example sentence:

The roofing will be made from a covering of roofing plates with covering tiles and tiled covering for terraces (terraced houses) following construction permit plans.

disagree Tony M : "Looks like" isn't good enough where specific technical knowledge is required; these are in no way 'plates' of any kind: neither, incidentally, are 'terrasses' in FR 'terraced houses' in EN.
