wyciąg mąki Explanation: Tradycyjnie używanym określeniem rodzaju mąki jest tzw. wyciąg mąki – określany w procentach jako stosunek masy wyprodukowanej mąki na 100 kg zużytego ziarna (resztę stanowiły usunięte otręby). Większy wyciąg charakterystyczny był dla mąki razowej (z ziarna raz mielonego), w której otręby usuwane są w niewielkim stopniu.
