ג'מיד Explanation: ג'מיד (בערבית: جميد, פירושו: "קשיח". בעברית: נקרא גם: "אבני יוגורט". בפרסית: کشک/ כָּשְׁכּ) הוא סוג של "יוגורט מיובש" עשוי מחלב עיזים או מחלב כבשים הנעשה על ידי תהליך של ייבוש לכדי צורה של כדורים במטרה לתת לו "התקשחות" ועל ידי כך לשמור עליו לאורך זמן רב. מאכל זה מיוצר בדרך כלל בירדן על ידי בדואים אך נפוץ גם אצל הבדואים בישראל (בעיקר ביהודה ושומרון), במצרים, ואפילו בסוריה. גרסה דומה לג'מיד נמצאת באיראן ושכנותיה (בשם כשכ או קורות). לעיתים נהוג גם להוסיף את הג'מיד לרטבים או למרקים, והוא משמש גם מרכיב חשוב במנסף, ובמטבח האיראני במאכל כשכ אוֹ באדמג'אן (کشک و بادمجان) שהוא מטבל חצילים. |
