If the text referred to the length of the plate, which is the plate's longest dimension, I would use "along", as in "polarized along its length".
But as it refers to the thickness, that is, probably the shortest dimension of the plate (length, width, thickness), I would choose the preposition "across".
I would also use "across" if it refered to the width.
