Glossary entry (derived from question below)
English term or phrase:
to not split
German translation:
stabile Konsistenz / sich nicht in Bestandteile zersetzen; to split: brechen, entmischen; gerinnen, ausflocken, (umkippen)
English term
to split
"XXX is perfect for all culinary requirements such as
gratins, casseroles, sauces or soups. This functional product has been created especially for cooking and so does not *split*, reduces just like a dairy cream and works well even with acidic ingredients like tomatoes, lemon and wine."
It's the "split" I'm mainly having problems with. I know what it means (the separation of the oil base and the dairy ingredients, according to the client) but am struggling to find a German word for it. If I say "Das Produkt setzt sich nicht ab", that's not quite right because in German, it's not the product but the ingredients that "split". Has anybody got an idea what this is called in German? Any suggestions gratefully received!

Danke! Ist Ausflocken nicht, wenn man ein Flockungsmittel zugibt?

Auch, wenn selbst von meinem Vorschlag inzwischen eher abgerückt bin (s. o.), das Folgende passt wieder ganz gut zu "gerinnen/ausflocken":
Sometimes the emulsion will not work, when this happens we say the sauce has split or curdled, mayonnaise will curdle or split for a variety of reasons: ...

Occasionally mayonnaise can 'split' or separate into a lumpy mess of egg and oil during the whisking. To avoid this, ensure that the ingredients are at room ...

: Ja. Auch wenn ich keine Fertigprodukte verwende, als Mensch mit Laktoseintoleranz muss man eben neu (und lecker!) kochen lernen.//Ausflocken klingt gut!
