more than one way to write it

This is a proper name (a persons name). There is more than one way to write it. You can use the 'hiragana' syllabary NA-TSU-MI . Have never seen the two examples you used above used as names. There are also other combinations of characters (hanji) used, look in the glossaries under "Natsumi".
