young pork loin
Explanation:
To my knowledge all domestic male pigs that are not going to be used for breeding are castrated. What's more, uncastrated pig meat is actually of less value, see article below, on that basis, what farmer is not going to castrate?

On that basis to state that your pig meat comes from a castrated animal es de sobra.

I have seen barrow boar, meaning castrated wild pig, but not barrow pig.

I have found no reference in English to castrated pig/pork as part of a receipe.

Is it essential? It's just one ingredient. Especially given the assumption that all pigmeat comes from castrated pigs.

I would suggest "young pork loin" or "suckling pork loin"

Male pigs are usually castrated within the first 3 to 14 days after birth. New pork industry swine care recommendations (2) suggest that boars be castrated at 2 weeks of age or younger. If males more than 8 weeks old must be castrated, the industry recommends use of anesthetics to reduce the pain. **********Most adult male pigs develop a characteristic off-flavor and odor that has been termed “boar odor,” which consumers find highly objectionable.************** Castration substantially eliminates the occurrence of this odor. At market time, pork producers receive much less compensation for boars than for castrated males (barrows). In a recent demonstration project, boars had only two-thirds the market value of barrows (3).

Last year, 32,000 tonne of pork, suckling pig and young pork were sold offshore, including 15,000 tonnes to Russia, 12,000 tonnes to Hong Kong, 5,000 tonnes to mainland China and Laos, and 2,000 tonnes to Malaysia. The heavy offshore demand for suckling pig and young pork has translated into reduced supplies of pork on local markets.

disagree  Lia Fail (X): castrated pig, not pork, since pork is a meat not an animal

agree  Donovan Libring: pork loin is what she was referring to, the castrated is not needed if you are talking about meats

cinta o cordon de lomo es el borde del lomo no el lomo mismo, que es de una calidad inferior.
