Source text - German Die Meistersinger aus Tokyo	Translation - English The ‘Meistersinger’ From Tokyo The conductor Masaaki Suzuki and his adorable Bach College Japan on tour in Germany (from Wolfram Goertz) With Mr. Suzuki, basic mathematics gets to a higher consecration. “The Credo for 4 voices we do with 6, 4, 4, 4, the Confiteor for five voices with 3, 3, 4, 4, 4, the Osanna for two choirs with 3, 2, 2, 2 twice.” Masaaki Suzuki has thought very cleverly about the arrangement of the voice groups ranging from descant to bass and the number 18 as a total. “With 18 singers, it sounds the most beautiful, “ he says, “then we achieve the perfect contrast between solo and the choir, the best level of composition and we stay relaxed and flexible.” An essential virtue. Without it, a choir performing Johann Sebastian Bach’s h-moll-Messe will simply fail. Masaaki Suzuki, born 1954 in Kobe, is the conductor of the Bach College Japan, a handpicked formation of musicians, who have been enduring and capably paying such close attention to Bach since 1990, that the occident is speechless. Just now, Suzuki’s team was honored by the jurors of the ‘Deutsche Schallplattenpreis’ (German record prize) for the 27th sequence of its recording of all of Bach’s cantatas and now they have betaken themselves to the Franconian town Ansbach, to perform during the local Bach week the h-moll-Messe. After the concert one could see incredulity in the faces of the audience. Some might have asked themselves, what could have happened to this world and its traditions, that their holy Bach had been presented so deeply, virtuosic and dearly by the Japanese. One doesn’t need to ask Mr. Suzuki, where such latent arrogance is coming from. He studied Cembalo under Ton Koopman and organ under Piet Kee in Amsterdam; he is one of those musicians from the Far East , who extend their studiousness at Europe’s conservatories after diligent years in their homeland (“we always used to meet at Koopman’s home until 4:00 AM”) and who return with a suitcase filled to bursting with experience to their country. Suzuki, however, has remained intercontinental active, since Bach is an open book to him, which continuously wants to be questioned and explored. The experts are located in Goettingen and Leipzig. Suzuki knows them all. His record company BIS is located in Sweden. And to this day he remembers Ton Koopman’s wise theorem: “Don’t do it the way I do it. During the concert this part worked so well, that the audience was lost in its beauty. One of the two chorical counter tenors sang the h-moll-Messe completely by heart. He knew it so well, that he could even turn the pages by heart. Like all of his 17 colleagues he seemed to be serendipitous being given the chance chanting Bach. Musicians in this country, believing to own Bach but only reluctantly getting in touch with his highest standards, could learn a lot from such an ethos. Suzuki’s way of making music shines from the inside. It impresses with briskness and dynamic, with pep and a vocal core – not only in forte but also in the ulterior piano. No whispering, never. As a matter of course, making music on historical instruments wasn’t a Japanese invention, but an import; nevertheless in the past 15 years of unfailing practice the origin has become insignificant. Suzuki’s ‘Bach maintenance’ has become an archetype itself in Japan. Suzuki’s version of the h-moll-Messe offers indeed more than just a fabulous Masterpiece of music: With him, the last beats of the Confiteor really are a chromatic, anxious and mysterious melody, which the conductor lets burst out into the D-major rejoicing with an almost swinging delight of redemption. The early arisen wish of eventually performing this masterpiece didn’t come out of nowhere. His first own record was Karl Richter’s recording of this piece of music, of which he still today respectfully says: “This has shown me, who Bach is.” The musicians of the Bach College are continuously speculating about this question, too. Whosoever isn’t busy during the performance, listens to the music with eyes shut. After the h-moll-Messe in Ansbach, Germany, the Bach College Japan performed at a music festival in Schleswig-Holstein, where it brought the Magnificat, motets and cantatas back to Bach’s home country. German to English: Recipe for Mandelbuchteln
Source text - German Einleitung Buchteln, Dukatenbuchteln oder auch Rohrnudeln kommen aus der böhmischen Küche. Sie sind eine wunderbare Spezialität aus der Wiener Mehlspeisenküche. Gefüllt oder ungefüllt erfreuen sie sich großer Beliebtheit. Das folgende Rezept der Mandelbuchteln basiert auf dem Grundrezept „Buchteln“, und ist eine feine elegante Abwandlung, die man frisch und noch leicht warm genießen sollten auf der Zunge und mit der Nase. Rezeptbezeichnung Mandelbuchteln Menge Ergibt ca. 25 Portionen (1020g fertiger Teig) Zutatenauflistung 200 g Milch 70 g Zucker 25 g Hefe, frisch 250 g Mehl (Typ 405) 100 g Eier (2 Stück) 1 Zitronenschale, gerieben (unbehandelt und gewaschen) 40 g Mandellikör 200 g Mehl (Typ 405) 9 g Salz 50 g Mandeln, gemahlen 5 g Zimt 70 g Butter (Raumtemperatur) Herstellungsweise Zuerst wird ein Ansatz oder wie man in Österreich sagt Dampfl hergestellt, indem Milch, Zucker, leicht erwärmt werden (ca.25-30°C) und die frische Hefe darin verrührt. Nun arbeitet man die 250 g Mehl unter und stellt die Schüssel gut abgedeckt an einen nicht zu warmen Ort. In der Zwischenzeit kann ein Backblech (25x35) oder auch eine kleine Pfanne vorbereitet werden, indem sie gut mit Butter ausgestrichen wird. Eier, Zitronenschale und den Mandellikör leicht schaumig schlagen und unter den inzwischen aufgegangenen Ansatz arbeiten. Nun das restliche Mehl mit den Mandeln, Zimt und der Butter zugeben und einen glatten Teig herstellen. Den fertigen Teig zu einer Kugel Formen, gut abdecken und an einen nicht zu warmen Ort stellen, damit der Hefeteig aufgehen oder garen kann. Sollte der Buchtelteig eventuell etwas zu fest geworden sein, was durchaus mit der Mehlqualität zusammen hängen kann, sollte noch einwenig Milch zugegeben werden. Die Hefeteigkugel sollte ganz leicht breit laufen, dann ist der Teig gut. Den Buchtelteig nun vor holen, kräftig zusammen walken und noch einmal etwas 15 Minuten abgedeckt warm stellen. Zum aufarbeiten wird der Teig in 100 g Stücke abgewogen. Jedes Teigstück gleichmäßig etwa 15-20 cm lang rollen und mit einem Messer in 10 gleiche Teile teilen. Die kleinen Teigstücke auf dem Tisch zu kleinen Kugeln formen und in lauwarmer flüssiger Butter rollen und dicht an dicht in das Backblech oder in die Pfanne setzen. Die Butter verhindert nicht nur das die Buchteln fest zusammenbacken, sondern macht sie in Verbindung mit dem zarten Mandelgeschmack zu einem Erlebnis. Sind alle Buchteln aufgesetzt werden sie noch einmal dünn mit flüssiger Butter bestrichen, mit Klarsichtfolie abgedeckt und an einen weniger warmen Ort zum garen gestellt. Sie sollten nun ihr Volumen gut verdoppeln, bevor sie in den vorgeheizten Ofen geschoben werden. Beat eggs, lemon peel, and almond liquor until they are foamy and mix them with the risen batter from the bowl. Add the remaining flour, almonds, cinnamon and butter until it becomes a smooth dough. Form the final batter into a ball, and place it well-covered in a location that is not too warm. This will allow the yeast dough to rise. Should the dough become too firm, this might be a result of the quality of the flour, this can be fixed by adding a little bit of milk. If the ball of dough spreads out slightly, the dough is good. Knead the dough thoroughly and keep covered and warm for another 15 minutes. To begin working with the dough, it should be divided into pieces, each weighing 100g. Roll each piece of dough evenly into about a 15-20 cm long roll and then divide it with a knife into 10 equal pieces. Form the small pieces of dough on the table into little balls and roll them in lukewarm, melted butter. Place them tightly together on the baking tray or in a pan. Not only does the butter prevent the pastry from sticking together, but when combined with the taste of almonds it creates a true experience.
