Source text - Spanish Conocer el comportamiento normal de especies productivas y su aplicación en la producción, salud y bienestar animal está tomando cada vez mayor importancia en el mundo. Ello permite evitar lesiones y/o enfermedades causadas por estrés y manejos inadecuados, comprender efectos de la interacción humano-animal y mejorar el trato a los mismos, logrando mejorar su bienestar y producción. Los bovinos productores de carne, animales de manada y de presa, que arriban a las plantas de faena deben manejarse respetando el comportamiento natural de los mismos. Esto implica una conducción tranquila, sin gritos ni apremios físicos de ningún tipo, a través de instalaciones adecuadas para el número y tamaño de los animales. De lo contrario, se dará un deterioro en el bienestar de los mismos, presencia de lesiones y detrimento de la calidad de la carne. El objetivo de este estudio fue caracterizar el bienestar de bovinos productores de carne a través de algunos indicadores post-mortem como lesiones encontradas en las canales. Se visitaron 7 establecimientos de faena de Uruguay habilitados para la exportación, durante Octubre y Noviembre, 2012. Se realizó un estudio observacional de las canales correspondientes al 25% de la faena del día de la visita, registrando los hematomas a la vista de observadores entrenados, teniendo en cuenta su localización, profundidad y forma, según protocolo previamente estandarizado. Los resultados mostraron que del total de carcasas observadas (1.030) el 44,4% presentaban lesiones y de éstas la mitad presentaba una sola lesión y el resto dos o más lesiones, por lo que una de cada dos carcasas presentaba hematomas. La caracterización de la prevalencia de estas lesiones constituye una valiosa herramienta, que de usarse rutinariamente en las plantas, brinda información sobre el nivel de bienestar y la forma de conducción de los animales en el período previo a su faena.
Translation - English Welfare is becoming an increasingly important issue world-wide. Understanding the natural behaviour of animals is important in production systems. This helps avoid injuries and/or illnesses caused by stress and incorrect handling, as well as to understand the effects of human-animal interactions. Improving the way animals are treated will improve their welfare and production. Beef cattle are both herd and prey animals. On arrival at slaughter plants they must be handled respecting their natural behavior. This implies a smooth handling, without shouts or any physical contact, through adequate facilities according to the number and size of the animals. Otherwise, there will be a detriment in the welfare of the animals, carcass bruises and decrease of meat quality. The objective of this study was to characterize the welfare of beef cattle through some indicators such as post-mortem lesions found in the carcasses. Seven slaughter plants authorized for export were visited in Uruguay y during October and November 2012. An observational study of the carcasses was performed, corresponding to 25% of the slaughter of each visit day. Carcass bruises were recorded by trained observers taking into accounts its location, depth and shape, according to a previously standardized protocol. The results showed that from a total of 1030 carcasses observed, 44.4% of them had bruises, half of them had one lesion and the rest had two or more lesions; thus, one of two carcasses showed bruises. The characterization of the prevalence of these bruises is a valuable tool to be used routinely in slaughter plants, providing information on the level of welfare of animals and the way they are treated during the pre-slaughter period.

Source text - Spanish El continente Americano por sus grandes dimensiones, diversidad étnica, sociocultural y económica será el futuro proveedor de alimento para el mundo. Las condiciones de cría de animales, transporte y sacrificio varían entre países con características geográficas y climáticas diferentes. El presente artículo tratará de relevar los principales factores impulsores del Bienestar Animal (BA) en las Américas, incluyendo normas de la OIE, legislación, códigos de buenas prácticas, avances en materia de educación, entrenamiento, investigación y desarrollo. Se reconoce el rol fundamental que desempeña cada uno de los actores en el cambio de percepción respecto al BA, concientizando a la población, promoviendo la comunicación y la cooperación como motores de un cambio global en las Américas. Existen iniciativas por parte de Organismos Internacionales, Regionales, sectores públicos, privados, Academia y ONGs, con resultados alentadores. La OIE creó el Centro Colaborador (CC) para la Investigación en BA en las Américas, Chile-Uruguay con la reciente incorporación de México. El mismo trabaja en estrecha vinculación con Delegados Oficiales de OIE y con los Puntos Focales de BA de los Servicios Veterinarios. Se adoptó la Estrategia Regional de OIE en BA para las Américas bajo la coordinación de la Representación Regional como guía para desarrollar futuras políticas basadas en un enfoque regional. La capacitación, difusión y transferencia de conocimiento es la forma de lograr un cambio cultural que mejore el BA, la seguridad de los operarios y la rentabilidad del sector. Los resultados obtenidos demuestran la efectividad de la conjunción de esfuerzos entre todas las instituciones y el rol activo del CC así como de los programas de Educación Permanente implementados a través de las Universidades.
Translation - English The Americas, due to its large size, ethnic, cultural and economic diversity, will be the future provider of food for the world. The conditions of animal husbandry, transport and slaughter vary between countries with different climatic and geographic characteristics. This article will focus on the main drivers of the Animal Welfare in the Americas, including OIE standards, legislation, good practices, and improvement in education, training, research and development. Each of the actors involved, play a key role in the change of public perception regarding AW, rising awareness, promoting communication and cooperation as drivers of global change in the Americas. There are several initiatives taking place regarding the welfare of production animals by International as well as Regional Organizations, public and private sectors, Academia and NGOs, with encouraging results. In 2009, the OIE created the Collaborating Centre (CC) for Research in AW in the Americas, Chile-Uruguay with the recent addition of Mexico. The CC works closely with OIE Official Delegates and AW Focal Points of Veterinary Services. Recently, the Regional Strategy for AW of the Americas was adopted by OIE under the coordination of the Regional Representation, as a guide to develop future policies based on a regional approach. Training, dissemination and knowledge transfer is the way to achieve a cultural change to improve the AW, the operators’ safety and profitability of the sector. The results show the effectiveness of the joint efforts between all institutions and the active role of the CC with Continuing Education programs of Universities.
