Cacao pods (cabosses) - the fruit of the cacao tree - are knocked from the tree and SPLIT, either by being struck expertly with a stick (preferred) or with a machete (with ensuant risk of damaging some of the seeds (cocoa beans) inside the pod), to release the seeds they contain.
ATTENTION : After fermenting to remove the mucilage, the BEANS (as opposed to the pods) themselves have to be shelled, dehulled or dehusked before crushing into nibs.
I rather think "décabossage" refers to the first operation.

Gathers follow the harvesters who have removed the ripe pods from the trees. The pods are collected in baskets and transported to the edge of a field where the POD BREAKING operation begins. One or two lengthwise blows from a well-wielded machete is usually enough to SPLIT OPEN the woody shells. A good breaker can open 500 pods an hour.

Workers cut the high pods from the trees with large knives attached to poles, taking care not to damage nearby flowers or buds. The women of the family collect the pods in large baskets (which they carry on their heads), before piling up the pods ready for splitting.
The pods are split open by hand and the seeds or beans, which are covered with a sweet white pulp or mucilage, are removed ready to undergo the two-part curing process: fermentation followed by drying. This prepares the beans for market and is the first stage in the development of the delicious chocolate flavour."
