Und "winged alter" laut Google is üblich.

I guess one should really never be overconfident, since this is presuming that some part of the orchestra or group of musicians is playing in the winged alter, while another part is playing in the central part, but it seems like a pretty good bet.

neutral  Steffen Walter: Not sure at all - these "Seitenflügel" seem to be parts of the piece of music here (as opposed to the "Mittelteil" of the composition). I also fail to see how the Seitenflügel of an altar can be ausgelassen (exuberant) / Not impossible but unlikely IMHO

  -> You may be right. I'm not German, but is it impossible that this is an odd way of saying that the (musicians in the) middle section is (are) playing the violine part in H-dur, while (the musicians in) the winged alter is (are) playing exuberantly?
disagree  Francis Lee (X): It is common practice for all members of an orchestra to play in (roughly) the same key, Henry. Steffen also makes a good point./ By the way: the strings are normally located to the conductor's left (violins) and right (cellos & bass) ...

The other proposed answers are on the right track. I believe it is "side wings" used figuratively as parts of the music flanking the central part. Here is another example in the music context:

Or the secondary themes of a movement (Seitenthemen, Seitensätze). I think this would be better than "side wings," which I don't find in similar English contexts. I don't think it's a matter of beginning, middle, end, but primary/secondary (there can be more than one secondary theme, and Flügel is plural here.)
