What is the most Accurate Arabic translation for "to sear the meat"? Coz "searing" is obviously different from "frying" but I still can't find the right word.

May be "شوي على درجة حرارة عالية"
the preparation combines two common forms of cooking. First, sear the meat in a heavy skillet over high heat to brown it. Then transfer it to a moderate oven to finish cooking. The result is a flavorful browned crust that roasting alone cannot produce in a short amount of time and an even doneness

No, because the chef will sear the meat, then roast it at 400 degrees. There is a difference bet. "sear" "fry" and "roast" |

يسود-يفحم
تدهن قطعة اللحم بنقاط من الدههون واللملح والفلفل ثم توضع علي مقلاه ساخنة جدا وعلي تار عالية جدا وبعد ان بتم حرق الناحينتن من الخارج وتكون السوائل الداخليه تم الاحتفاظ بها داخل اللحم قد تقدم هكذا او تطبخ بطريقة أخري

is commonly used literally for some dishes " char-broiled.. and blackened fish/meat/chicken..: when it is served totally black.. I don't know for sure. As well I am not sure about Browning the meat because it is not equal to Searing. Is there a chef on board?
