This term is used in the context of a hotel kitchen (Balearics), so laundry is not appropriate. I am assuming it is some kind of conveyor dish washing mechanism from a photo I have seen a website, but just wondered if anyone knows for sure whether this is correct. Or is it just another term for 'dishwasher'.

You could use that, rather than "dishwasher" and be on the safe side. It is obviously what it is talking about. "Dishwashing equipment" will go perfect in your context. I have heard the expression "tren de lavado" before.
