These two terms describe the status of a blood sample (tube) when it is processed in the laboratory.
Sealed means that the tube is closed with tape (its cap was removed for reuse). Unsealed = tape is removed.

on peut aussi dire décacheté mais ici ouvert est mieux à mon sens

Your blood sample put into a tube, covered with a tape, is in a "sealed" status. When you remove your tape, you unsealed it. In French, you've got the possibility to use both "Bouché" or "Fermé hermétiquement" for the word sealed and "Débouché" for the other word unsealed.
